Some background on me- I was never brought up or TAUGHT how to cook. Both my parents worked and my mom would do what most moms in the neighborhood would do- and that was stick to (more or less) the same 5-6 meals each week. Now that being said, my family went out to eat A LOT!! And when I say A LOT, I mean we were going out to eat about 4-5 times a week!! Same restaurants, same foods PACKED with TOO MANY CARBS, TOO MUCH SUGAR/ FLOUR and overeating. Lucky for me, I had a fast metabolism that could keep up. However, this being said, all that CRAP was no good for ANY DIET, no matter WHAT AGE!!
Fast forward to about a year ago- I am now living in Miami (one of the biggest health conscious/ image based city’s in the US) and my fiancé and are on a very routine, regular schedule. To the point where we have our own SUCCESS SCHEULDE posted up on our calendar! We’re up pretty much at the same time every day, workout, I make breakfast send him off to work with a packed HEALTHY lunch and then I cook dinner for the both of us pretty much 7 days a week! We like to go out to eat on occasion but the biggest thing for me about eating out is I DON’T KNOW WHAT’S IN MY FOOD!! How is it prepared? What ingredients are they using? I can’t control this sitting down and having my food brought to me behind closed walls. I’m not saying going out to eat it bad (all the time), you will be put in certain social setting like birthday parties, holidays, etc where you will need to be comfortable with eating food that you have not prepared.
But what I am saying is that when you BUY THE FOOD AND COOK THE FOOD- you control every ingredient that goes into that meal! It’s healthier, more delicious and ALMOST 100% of the time HEALTHIER FOR YOU!!
Learning how to cook, but not just cook ANYTHING- cooking healthy, clean and whole foods is what I’m talking about!! AND IF I CAN DO IT, YOU CAN DO IT!! To start, I just picked up some cook books at the grocery store or online and STARTED COOKING!! I admit, at first not every meal turned out great (and sometimes I cook something that I don’t love) but guess what…I’m trying! I am cooking clean for my, my family, friends and anyone who wants to learn how to live a healthier lifestyle! And that’s why I say IF I CAN DO IT, SO CAN YOU- because I wasn’t brought up learning how to cook! I simply decided one day that I wanted to become healthier, have my family eat healthier and make the people around me want to live more healthy, active lifestyles!
One of the recipes below I have just cooked this week! A super easy, healthy dish that you can cook up in about 20-30 minutes!

Lemon & Garlic Chicken with Tomato-Kale Salad
1. Combine 2 tablespoons juice, 2 teaspoons garlic, 1 teaspoon oregano, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a bowl. Add 1 tablespoon oil, stirring with a whisk. Add chicken, and stir; marinate in refrigerator 2 hours, covered.
2. Remove chicken from bowl; discard marinade. Heat a pan over high heat. Add chicken; cook 6 minutes or until done, turning often.
3. Combine remaining 1 tablespoon juice, 1 teaspoon garlic, 1/2 teaspoon oregano, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a medium bowl. Gradually add remaining 2 tablespoons oil, stirring well with a whisk. Add parsley and tomatoes; toss to coat. Serve chicken on top of salad.
